Banana Chia Granola
Featuring banana, chia, flax, pumpkin seeds, and maple syrup, this granola is super tasty, crunchy, and good for you - everything a homemade granola should be, all with a cooking time of under 30 minutes.

Ingredients
1 ripe banana
2 cups rolled oats
2 tbsp chia seeds
1 tbsp flaxmeal
1/2 cup pumpkin seeds (can substitute for peanuts or crushed almonds)
1/2 tsp cinnamon
1/4 tsp nutmeg
2 tbsp coconut oil
2 tbsp maple syrup
Instructions
Preheat oven to 340 F
In a large bowl, mash banana into a paste (more of goo)
Add rolled oats, chia, flaxmeal, pumpkin seeds, cinnamon, and nutmeg
In a small pot on medium heat, melt 2 tbsp coconut oil and add 2 tbsp maple syrup
Stir syrup and oil on low heat to combine until there is no visible separation (about 1-2 minutes)
Add syrup and oil mixture to bowl and stir thoroughly to combine
Pour mixture on to a baking sheet and spread evenly (parchment paper and a half size baking sheet is recommended for optimal clumpiness)
Bake for 20 minutes, tossing with a spatula half way through
