Broccoli Bites
Whether you love broccoli or hate it, this recipe is for you. Crispy on the outside, soft and fluffy in the middle, these broccoli bites will make a veggie lover out of anyone.

Cook time: 35 minutes
Serves: 6
Ingredients
2 medium broccoli florets
2 cloves garlic - chopped
1/2 medium white onion - diced
1 tbsp hot pepper (fresno, serano, or jalepeno) - finely chopped
1 tbsp flaxmeal
3 tbsp water
4 tbsp all purpose flour
1 tsp baking powder
1 tsp salt
1 tbsp coconut or other neutral oil
Instructions
Preheat oven to 380 F
Lightly steam and finely chop broccoli florets (see below for steaming instructions)
Finely chop onion, garlic, and pepper
In a large bowl, combine 1 tbsp flaxmeal with 3 tbsp water and mix
Add broccoli, onion, garlic, pepper, 4 tbsp flour, 1 tsp baking soda, 1 tsp salt, and mix thoroughly to combine
Lightly oil a muffin pan and fill each tin to the top with broccoli mix
Bake for 30-35 minutes
Remove from oven and let cool
Turn tin out on to a large cutting board to remove broccoli bites
Garnish with lemon zest
How to steam broccoli without over cooking
Rinse broccoli and place in a large stock pot
Add enough water so that the bottom is just covered
Cover and place on high heat
As soon as the water comes to a boil, remove from heat and let sit covered for 6 minutes
