Creamy Split Pea & Carrot Soup
A rich, creamy, hearty soup, of split peas, carrots, ginger and turmeric. This super healthy soup is the epitome of comfort and is just what you need on a dreary day to make you feel that all is right with the world.

Cook time: 40 minutes
Serves: 6
Ingredients
1 lb green split peas (dry)
1 large red onion
10 cloves of garlic
1/2 oz fresh turmeric (about a thumb size piece)
1 1/2 oz fresh ginger (about 2 thumb size pieces)
3 Large carrots
2 tbsp olive oil
1 tsp ground cumin
1 tsp paprika
1/2 tsp coriander
4 cups vegetable broth (or water)
2 tsp salt (plus more to taste)
Instructions
Rinse and soak peas in cool water overnight (soaking is optional but recommended)
Peel and roughly chop onion, ginger, and turmeric
Peel and crush garlic using the side of your knife (don't chop)
Wash and chop carrots into wheels
Add tbsp of olive oil to large stock pot on medium heat
Add onion, ginger, turmeric - stir and let sweat for 2 minutes
Add garlic and carrots
Add 1 tsp cumin, 1 tsp paprika, and 1/2 tsp coriander and stir to coat
Let sweat for 2-3 minutes
Drain and add peas to pot
Add 4 cups of vegetable broth (or water)
Cover and bring to boil then reduce heat and let simmer covered for 25-30 minutes
Add 1-2 tsp of salt and juice from 2 limes
Place a slice of bread in a high power blender (optional but recommended for optimal creaminess)
Transfer soup to high power blender and blend on high until smooth
Serve and garnish with olive oil, cracked pepper, and lime
