Curry Roasted Spaghetti Squash

Creamy. Roasted. Squash. Curry. What else is needs to be said? This dish is hand down my favorite squash recipe and is sure to be the tastiest center piece at your next fall gathering.





Prep time: 10 minutes

Cook time: 35 minutes

Serves: 4-6




Ingredients

  • 1 Spaghetti Squash (3.5-4lbs)

  • 1 medium yellow onion

  • 5 cloves garlic

  • 1 oz fresh ginger (about thumb size piece)

  • 1 Serano, Fresno, or Jalapeno pepper

  • 2 tbsp olive oil

  • 1/2 tsp cumin

  • 1/2 tsp turmeric

  • 1/2 tsp paprika

  • 1/4 tsp coriander

  • 16 oz can coconut milk

  • 1 lime

  • 1 tsp salt (plus more to taste)




Instructions for Spaghetti Squash

  1. Preheat oven to 400 F

  2. Half squash long ways and scrape out seeds using a spoon

  3. Drizzle with olive oil and salt then place cut side down on a large baking sheet

  4. Bake for 25-30 minutes until tender

  5. Remove from oven, flip cut side up and let cool for 10 minutes

  6. Using a fork, scrape squash into strands and away from the sides

Instructions for Coconut Curry

  1. Peel and roughly chop onion

  2. Peel and finely chop ginger

  3. Peel and crush (don't chop) 5 cloves garlic

  4. Remove seeds and slice pepper

  5. Place a large fry pan on medium heat and add 2 tbsp olive oil

  6. Add onion, garlic, ginger, and pepper and let sweat for 5 minutes

  7. Add 1/2 tsp each of cumin, paprika, turmeric, and 1/4 tsp coriander, stir to coat, and let cook for 2 minutes

  8. Pour in 1 can of coconut milk and stir in

  9. Reduce heat and let simmer for 3-5 minutes, stirring occasionally

  10. Add 1 tsp salt and juice from one lime

  11. Remove from heat and transfer to blender

  12. Blend on high until completely smooth

Instructions for Serving

  1. Transfer squash to serving bowl or keep in squash shell (recommended)

  2. Spoon curry over squash

  3. Garnish to roasted pumpkin seeds and paprika
