Edamame Hummus
Creamy, rich, beautiful, and uniquely satisfying, this edamame hummus may make you question chickpeas forever.

Ingredients
2 cups shelled edamame (I like using the frozen shelled edamame from Trader Joes)
3 tbsp olive oil (plus more for garnish)
2 tbsp lemon juice
2 tbsp tahini
1/2 tsp cumin
1/2 tsp paprika (plus more for garnish)
1 tsp salt
2 cloves crushed garlic
Instructions
Place 1 tbsp of olive oil in a large fry pan on medium heat and add shelled edamame
Cook and stir occasionally until completely defrosted and heated through out
Place edamame in blender
Add 2 tbsp olive oil, 2 tbsp lemon juice, 2 tbsp tahini, 1/2 tsp cumin, 1/2 tsp paprika, 1 tsp salt, 2 garlic cloves, and 1/4 cup of water
Blend on high until smooth or desired consistency is reached
Pour into serving bowl and garnish with paprika and olive oil
